Chef Suzanne Trachtís TIPS:
All in the Family

Chef Suzanne Tracht of Jar – Los Angeles, CA
Adapted by

  • Prepare the turkey with love, using a brine of salt, sugar, and spices.
  • At Jar and Tracht’s (in Long Beach) we make a confit out of the turkey legs and thighs and serve them alongside the roasted meat.
  • Thanksgiving means families will be in the restaurant, many with three or more generations. The menu should cater to young and old tastes.
  • From a restaurant perspective, the day's family dynamic calls for devoted attentiveness from restaurant staff. Be “on the mark” from every point, including the valet, hosts/esses, servers, and back of the house staff.
