thanksgiving mixed grain salad

Yield: 6 Servings
Ingredients:
- ¼ cup wheat berries
- ¼ cup wild rice
- ¼ cup brown rice
- ¼ cup pearl barley
- ¼ cup dried cherries
- 1 ½ ounces walnuts
- 1 ½ ounces pumpkin seeds
- 1 ½ ounces sesame seeds
- 1 ½ ounces sunflower seeds
- 1 ½ ounces sherry vinegar
- 1 ounce olive oil
- 1 ounce walnut oil
- Salt and freshly ground black pepper, to taste
Method:
Cook all grains and rice separately until al dente and cool each under
running water. Place all grains in colander and set to dry. Toast all
nuts and seeds separately in oven until they have desired flavor and texture.
Mix all ingredients in large bowl: grains, cherries, nuts, seeds and flavor
with oils and seasoning.
