(12 ounce) bags fresh cranberries
2 cups fresh pineapple, medium dice
zest of 1 orange
4 ½ cups sugar
cup fresh lemon juice
1 teaspoon crushed cloves
2 teaspoons cracked allspice berries
each fresh vanilla bean, seeds scraped and reserved
2 Tablespoons fresh ground black pepper
lemon juice to boil w/ allspice and cloves. Remove from heat and
steep for 10 min. Strain and dispose of the spices, reserving the
¾ of the bag of cranberries, the pineapple, orange zest,
vanilla bean seeds, sugar and lemon juice into a pot and simmer
for approximately 30 to 40 minutes, or until the berries have cooked
down and the mixture has thickened.
the remainder of the bag of berries, simmer again for 15 minutes.
Then, add black pepper and cook 5 more minutes. Store in the refrigerator
and serve cold or room temperature.
