Michael Lomonaco
Executive-Chef Windows on the World, New York, N.Y.

Never cook turkey in a slow oven overnight because it's dangerous. Begin roasting the turkey at 425F for 30 minutes and then lower it to 350F for the remainder of the required time to cook. This makes for a crisp, moist bird. Cooking a turkey unstuffed will result in a more evenly cooked bird without dry breast meat. I always cook it unstuffed.
