Project Description:
Chef Ken Frank at La Toque in Napa Valley, CA had a vision – and it was on a fast track. Designed by Frank Müller of Müller Food Facilities Planning and Design in Minden, NV, the project was bid for and built in a short 4 months. The installing dealer was Duray / Bay Area L.D. Smith. The inspiration of the project was a refinement of Chef Ken’s original design at the previous La Toque in Rutherford: an open suite set up for the kitchen to cook as a team, all flowing towards the heated marble pick up counter. Incorporating both an 18” plancha and a 24” plancha on either side, the project also featured 22 open burners, 2 fryers, an 18” chargrill and incorporated refrigerated bases.
