Project Description:
Following his success at Lula Café with his Jade, chef Jason Hammel partnered again with Jade for his suite at his upcoming restaurant, Nightwood. Designed in 3 weeks and installed by Jeff Carlin of TriMark Marlinn, one of the nation’s leading kitchen contractors, Hammel had a challenge: he needed a suite with enough flexibility and versatility to work in a very small amount of square footage. Featuring an open kitchen, the suite at Nightwood is built with a custom narrow overshelf with removable inserts for easy cleaning, lower than normal so it could be used from both sides without obstructing communication. Every aspect on the suite is lower than 56” off the floor. The suite also features a fryer, a log broiler - above which Hammel placed a rotisserie – four graduated heat French tops, two
open burners, three ‘’high mass’’ oven bases, one 12’’ hot top, and a customized end cabinet with electrical
duplexes, another versatile element of the suite, which can be used as work surface for small appliances or a flat surface for plating.
