Sommelier Joe Campanale,?formerly of Babbo,?and Chef Gabe Thompson, formerly of Le Bernardin,?have opened?Dell'anima, a small?wine bar and restaurant?in the West Village.?The list features 100 bottles?and the menu mixes Italian bar snacks with classic comforts like bone marrow custard, braised lamb shank, and housemade pastas.
NY Rising Star Chef Akhtar Nawab, formerly of Craftbar and currently the executive chef of The EU, announced plans today to open his own restaurant in the West Village in the spring of 2008. Chef Nawab will continue to serve as the executive chef of The EU when his restaurant opens.
Dave Arnold of FCI is making plans to open "the ultimate high-tech cocktail bar" with Star Pastry Chef Johnny Iuzzini. The spot will?focus on "an ultra-modern paradigm: still wines and juices carbonated to order with tongue-tingling intensity; rows of magnetic stirrers merrily whirling people's drinks in a chilling bath; rotovapping herbs and fruit for intense flavors; bourbon with soft, sweet nitrous-oxide bubbles; extremely cold drinks without the corruption of ice, super-chilled cocktail stirrers," says Arnold.
Gavin Kaysen, most recently of El Bizcocho in Rancho Bernardohas, been named executive chef of Chef Daniel Boulud's Cafe Boulud. He will replace Betrand Chemel who has left to open his own restaurant.
Restaurateur Peter Hoffman, of seasonally-driven Savory fame, has opened Back Forty, a farm-to-table restaurant which he owns with his wife Susan Rosenfeld and their partner Jerry Winter. The menu will be overseen by chef de cuisine Shanna Pacifico, lately of Town.
Patricia Yeo has left Monkey Bar, in the Hotel Elysee. Her replacement has not yet been announced.
Ivy Stark, executive chef of Amalia, has left. She is curerntly pondering a return to the B.R. Guest group who will open a Dos Caminos Las Vegas this winter. Rising Star Sommelier Stephane Colling, most recently wine director of The Modern, has been named the General Manager of L'atelier de Joel Robuchon.
San Francisco
Pastry Chef Leena Hung, formerly of Fifth Floor, is now the consulting pastry chef at Quince.

David Bazirgan, who recently designed the menu for Bossa Nova, will be the executive chef for the new Chez Papa opening in November in the Mint Plaza building in San Francisco. The 120-seat space will serve primarily Provencal cuisine and feature a full bar and an outdoor patio.

Key West - StarChef Norman Van Aken has returned to Key West, the island where his cuisine first garnered raves in the 80's. His new restaurant Tavern N Town opened in October at the new Beachside Resort & Conference Center. The space is two distinct restaurants: Tavern, a casual space with small plates and sushi, and Town, a formal room for fine-dining.
Emeril Lagasse's new restaurant, Table 10, is scheduled to open in January 2008 at the Palazzo in Las Vegas, a new strip property built by the Las Vegas Sands Corp, adjacent to The Venetian.
Paul Kahan, chef /owner of Blackbird and Avec, announced that his newest project is on shcedule to open in the spring of 2008. The unamed space, located at 845 West Fulton Market Street, will have a beer-centric menu.
Marcus Samuelsson, chef /owner at New York's Aquavit and Riingo, has announced his plans to open C House in Affinia Hotel in March. C House's menu will focus on seafood and the indoor / outdoor dining space will have a casual vibe.
