The Career Fair is your opportunity to market yourself to a diverse group of hospitality employers and attend the 'How to Make It' career panel, featuring Jean-Marie Lacroix of Lacroix at the Rittenhouse, Chris Lee of Striped Bass, Franklin Becker of Washington Square, Mark Andelbradt of Morimoto, and Matt Maslowski of Twenty 21. 5. Calling All Rising-Stars
StarChefs.com is accepting nominations for Las Vegas, San Francisco and Chicago Rising Stars. These industry awards recognize the country's top up-and-coming chefs, pastry chefs, bar chefs and sommeliers who demonstrate exceptional ability, motivation, and the potential to have a positive long-term impact on the culinary field. Chef candidates are judged on their creativity, presentation, ambition and, ultimately, on the taste of their food. 12. QuickMeals Recipe for Shrimp Scampi André
Chef André Rochat of Alizé at the Palms Hotel -Las Vegas, NV

Yield: 4 servings

Ingredients:
20 colossal shrimp (10 to 12 shrimp per pound), peeled, deveined and sliced in half lengthwise
Salt and pepper to taste
2 Tablespoons flour
2 Tablespoons butter
2 Tablespoons oil
3 large cloves garlic, finely chopped, or to taste
10 basil leaves, torn into several pieces if large
¼ cup Pernod
1½ cups heavy cream

Method:
Season shrimp with salt and pepper and dust lightly with flour. Heat butter and oil in a large frying pan over high heat. Sauté shrimp quickly so they brown slightly. Add garlic and carefully drain excess fat from the pan; don't worry about losing some garlic. Add basil and Pernod. To flambé, carefully ignite liquor fumes at the edge of the pan with a kitchen match to burn away alcohol. (If you prefer not to flambé, sauté for another minute or two to allow alcohol to evaporate.) Add cream, bring to a boil and reduce until sauce is lightly thickened and shrimp are just cooked through. Season with salt to taste and serve right away.
