10. Thomas Wolfe's Peeky Toe Crab Sausage Recipe
Chef Thomas Wolfe of Wolfe's of New Orleans - New Orleans, LA
Adapted by StarChefs

Yield: 10 (2 ounce) patties

Ingredients:

  • pound shrimp, peeled and deveined
  • 1 egg white
  • cup heavy cream
  • 1 bunch scallions, minced
  • 1 Tablespoon garlic, chopped
  • 1 pound peeky toe crab meat
  • 4 ounces fresh fennel, minced
  • Salt and ground black pepper, to taste
  • 2 Tablespoons flat leaf parsley, chopped

Method:

Puree shrimp in food processor until smooth. Leave processor on and slowly add egg white, heavy cream and scallions. Transfer to mixing bowl. Fold in garlic, peeky toe crab meat, fennel and parsley. Season to taste with salt and pepper. Form 10 patties. Cook like any other sausage.
