1. Meet the San Francisco Rising Stars - Online, and then In Person
What inspired our San Francisco Rising Stars to start cooking, mixing, and pouring? Which person in history would they most like to share a meal with? Read their interviews and glimpse the recipes they'll be preparing this Tuesday at The Westin St Francis for the city's attending chefs and foodies.
http://starchefs.com/chefs/rising_stars/2007/sf/html/index.shtml

...and speaking of Tuesday, we've got three more excuses to join the party: JetBlue's great fares, an exclusive rate at the W Hotel, and golf at the award-winning Harding Golf Course. It's the perfect way to celebrate with a dad, or a recent grad, who loves food. Just in time for a Father's Day celebration - the San Francisco Rising Stars Revue, plus a weekend of golf, great fares on JetBlue Airways, and a posh room at the W. The tasting gala, featuring signature dishes the hottest up-and-coming chefs in the Bay area, is Tuesday, June 19 from 7:00 - 9:30 pm at The Westin St. Francis.

2. Letter from the Editor - School's Out
It's that time of the year - berries, fiddlehead ferns, and garlic scapes at the greenmarket, schools closing for the summer, and StarChefs preparing for our International Chefs Congress coming up this September. How does it all fit together? This year's Congress will feature a new roster of international chefs, as well as new subtext: chefs' power to effect change.

3. For Father's Day: Boozy Food and Spirit Pairings from The Brandy Library
For Father's Day, a spirits and food pairing menu from spirits sommelier Ethan Kelley of The Brandy Library in TriBeCa. Kelley has tips for picking out a good bottle to give as a gift, as well as some very interesting pairings - from Mezcal and lobster to 100 proof single malt Scotch with smoked salmon.

4. Wine: Summer Burgundy
Burgundy isn't usually associated with summer, but we often forget that the word encompasses several regions, with different styles and sometimes even different grapes. Burgundy writ large usually means Pinot Noir and Chardonnay; many don't realize that Sauvignon Blanc, for one, has whittled away a home for itself in the north, and is joined by picnic-worthy Chablis and Gamay.

5. Pacojet Recipe Contest: Submit an Original Recipe, Win a Pacojet and a Trip to the Congress
Send us your original recipe using the Pacojet in either a sweet or savory application, and you could win a trip to New York City to attend the International Chefs Congress on September 16 -18, 2007 and a new Pacojet. The top three chefs in each category will be flown to the Congress to prepare their recipes for top chefs. The winner in each category will win a new Pacojet and have their recipes published on StarChefs.com.

7. Summer Drinks
Mixology gets in the mood for summer - cocktails shed their heavy winter layers of dark liquor and heady spices to embrace refreshing spirits perked up by floral and citrus notes. Honeydew and rum, grass vodka and lemonade, gin and cucumber: these exuberant flavor combinations result in some pretty cool cocktails.

8. Technique: Preparing Madako (or Common) Octopus
Chef Masato Shimizu of 15 East brings out the best in Madako octopus with massage - an intense, twenty-minute salt exfoliation, to be precise, followed by exactly 40 minutes of poaching. The result is an incredibly tender, perfectly flavored, perfectly textured tentacle.

      12. Recipe for Hearty Quinoa Salad by Chef Mihoko Obunai of Repast - Atlanta, GA
      From StarChefs QuickMeals
      Yield: 6 Servings

      INGREDIENTS:
      1 Tablespoon olive oil
      3 cloves garlic, minced
1 medium red onion, finely diced
cup sun-dried tomatoes, very thinly sliced (do not reconstitute)
      1 cup vegetable stock
      1 cup white wine
      2 Tablespoons lemon juice
      1 Tablespoon lemon zest
      1 cup quinoa
12 ounces tofu, cut into 1-inch cubes (or 2 cans tuna, drained)
pound asparagus, cut into 1-inch pieces
      cup green peas
      cup toasted pine nuts
      6 scallions, minced
      cup finely chopped parsley
      Salt and pepper

      METHOD:
Heat oil in a skillet over medium heat. Add the garlic and onion, and saute for 3 minutes. Add the sun-dried tomatoes, and continue to saute for 1 minute. Add the stock, wine, lemon juice, lemon zest, salt, and pepper, and bring to a boil. Stir in the quinoa, and simmer over low heat, covered for about 20 minutes, or until the quinoa is almost tender to the bite.

Add the tofu, and simmer for 3 minutes. Add the asparagus and peas, and simmer for 3 minutes. Top with the pine nuts, scallions, and parsley. Season with the salt and pepper.

      Wine Pairing:
A 2004 Oriel "Ortolan" Gruner Veltliner from Faulkenstein, Austria.
