The Experimental Cuisine Collective had its inaugural meeting in New York on April 11, 2007. From Wylie Dufresne's experiments with puff snacks and high concentration gellan gums to Robert Margolskee's research on the science of human taste receptors, the collective explored the properties, boundaries, and conventions of food within an interdisciplinary framework.

There are probably a number of ways of deciding whether an area might be conducive to growing winegrapes; Neil McCallum's goal was to get out of the rain, and that brought him to Martinborough. Today they produce Pinot Gris, Chardonnay, Gewurztraminer, and Pinot Noirs that knock the socks off the more aggressively-marketed Pinots of the Central Otago region.

    14. Recipe for Milk Chocolate and Buttermilk Panna Cotta from Chef David Uygur of Lola - Dallas, Texas
    A Bonus Recipe from StarChefs QuickMeals
    Adapted by StarChefs.com

    Ingredients:
    3 sheets gelatin, bloomed in cold water
    2 cups heavy cream
    1˝ cups buttermilk
    ˝ cup sugar
    4 ounces milk chocolate
    Pinch salt
    Lightly sweetened whipped cream and
    Grated chocolate
    Crumbled amaretti cookies

    Method:
    Over low heat, dissolve the gelatin in the heavy cream with sugar. Once dissolved, puree cream mixture with chocolate and buttermilk in a blender. Strain the mixture and then pour into ramekins or coffee mugs. Cover and chill for 2 hours before serving, and garnish with whipped cream, grated chocolate and amaretti cookies to serve.
