      17. Recipe for Three Shots Gazpacho from Chef Yves Fournier of 6ix Park Grill at The Hyatt Regency - Irvine, CA
      Adapted by StarChefs.com

      Yield: 4 Servings

      Ingredients:
      Green Gazpacho:
      6 ounces ripe green tomatoes cut into wedges
      1 ounce diced green pepper
      1 teaspoon diced celery
      1/3 cup vegetable broth
      ½ teaspoon sugar
      1 Tablespoon white vinegar
      4 basil leaves
      1 Tablespoon Italian parsley
      Salt and white pepper
      1 teaspoon diced cucumber

      Red Gazpacho:
      6 ounces ripe red tomatoes, cut into wedges
      1 ounce diced red pepper
      1 Tablespoon tomato paste
      1 Tablespoon white vinegar
      Salt and white pepper
      ½ teaspoon sugar
      1/3 cup vegetable broth
      ¼ teaspoon smoked Spanish paprika

      Yellow Gazpacho:
      6 ounces ripe yellow tomatoes, cut into wedges
      1 ounce diced yellow pepper
      ½ teaspoon roasted garlic
      1 Tablespoon white vinegar
      Salt and white pepper
      ½ teaspoon sugar
      1/3 cup vegetable broth

      Method:
      For the Green Gazpacho:

      Puree tomato, green pepper, celery, vegetable broth, sugar, white vinegar, basil and parsley in blender. Season with salt and pepper. Chill one hour before serving. Garnish with diced cucumber

      For the Red Gazpacho:
      Puree tomato, red pepper, tomato paste, white vinegar, sugar, broth and paprika in blender. Season with salt and pepper. Chill one hour before serving. Garnish with paprika

      For the Yellow Gazpacho:
      Puree tomatoes, yellow pepper, garlic, white vinegar, sugar and broth in blender. Season with salt and pepper. Chill one hour before serving.

      To Serve:
      Pour each gazpacho in a shot glass. Place the three shot glasses on a plate. Garnish plate with Taro root chips.
