1. Stephen Pyles, The Chile Whisperer: Article, Interview, and Recipes
One of the founders of New American Cuisine, Stephen Pyles, has an uncanny sixth sense about chilies - maybe that's because he's a 5th-generation Texan. He harnesses their power in his cooking with complementary flavors that enhance the chilies' heat and flavor. After taking five years off from restaurant work from 2001-2006, Chef Pyles has opened Dallas restaurant Stephen Pyles, and is planning a new "global tapas" venture. Chef Pyles talks with StarChefs this week about the evolution of the Dallas food scene, his experience with spices in a recent trip to India, and sparking what undoubtedly will be the newest American culinary trend, "New Millennium Southwestern cuisine." He also shares recipes for Ceviche of Bronzini with Vanilla-Roasted Fennel and Almond Gazpacho and Coriander-Cured Antelope with Llapingachos and Cranberry Mojo.

    3. JobSeeker Cover Letter Tip: Vocation Location
    If you are planning a cross-country move, or find a great job opening in another state, your job application process takes on a new dimension. In every job search, you have to convince the employer that you are the best candidate for the job, but for long-distance applications, you'll have to work even harder to prove your worth. You will be competing against many local candidates, and unless you make it clear from the beginning how well-suited you are for the job and how much you want it, they might pass over your application. Address the distance issue in your cover letter. You should always customize your cover letter to each application to show your interest in the company and your willingness to take that extra step. In this case, you'll need to mention why you are interested in the job, whether you already have plans to move, and which specific qualifications or accomplishments make you the best choice for the job. Often, employers will specify in an ad whether or not they are willing to help a new hire relocate. That information can help guide your search, so if you see a line that reads "local candidates only," keep looking. When you find an ad that specifies the employer will help the right person relocate, send in your tailored cover letter and resume, and start packing.

    4. An Interview with Champagne Nicolas Feuillatte Head Winemaker Jean-Pierre Vincent
    The most satisfying careers build on your passion, and few things inspire passion like Champagne. Jean-Pierre Vincent got an internship in the wine business after he finished his studies, and a few years later landed an incredible position at Champagne Nicolas Feuillatte. After 32 years as a winemaker, Vincent finds his role has evolved. Instead of just making the wine, he also travels the world to find out how people perceive Champagne and the Nicolas Feuillatte brand. Looking back to the beginning of his career, Vincent says, "If you had told me in 1976 that I would be one day head winemaker for a company that makes 9 million bottles a year, I wouldn't have believed you."
