1. Beyond Olive Oil Cake: Pastry Chefs and Olives
Rich, buttery, fruity, salty are all ways that describe both pastry and olives, two items on a menu that aren't often matched, unless a guest pairs a martini with dessert. Pastry chefs, building on the sweet-savory trend of recent years, are changing that, adding the brined Picholines to caramel - in the case of Jordan Kahn in San Francisco - or cured Kalamatas to a chocolate tart - in the Chicago kitchen of Elissa Narow, whose Valrhona Manjari Soufflé Tart with Candied Kalamata Olives woos skeptical patrons at Customs House.

3. Pastry Chef Tips for Pastry Success: Nicole Krasinski of Rubicon
Nicole Krasinski began making breads and pastries for her friends and family while studying photography in college, and soon realized her true passion was not in the darkroom, but in the kitchen. Chef Krasinski worked in Illinois and Michigan before the warm weather and seasonal bounty lured her back to her home state of California. In the spring of 2004 she took the pastry chef position at Rubicon where she was recognized as a StarChefs.com Rising Star in June of 2007.

Chef Krasinski calls honey comb a "particularly under utilized" ingredient, and appreciates the "bizarre texture" it adds to dishes. When in doubt, she confesses that her three go-to ingredients are Maldon salt, nuts, and chocolate.

Chef Krasinski shares her top tips for dessert success:

1. Make sure you have a clear idea of what you want as your final result.

2. Use the right tool for the right task.

4. Holiday Baking with Chad Guay and Monica Rios Carter
While winter desserts are often overburdened with heady spices, chocolate, and rich sauces, pastry chefs like Chad Guay and Monica Rios Carter are using the flavors of fruity olive oil, green fennel, and sharp citrus to lighten and brighten seasonal flavors.
