3. JobSeeker Interview Tip: How to End it
The conclusion of a job interview should leave a professional, positive, impression on your prospective employer, encouraging them to take the next step in the hiring process.

At some point in the interview, there will be a lapse in the interviewer's questions; this is often the time that you are expected to ask questions of your own. Don't be caught off guard - this is the time to ask the questions you've prepared in advance to demonstrate you've researched the restaurant or hotel where you hope to work. Familiarize yourself with their executive chef and their signature dishes, and be ready to prove you can think on your feet.

As the interview concludes, restate your strengths and skills that match the position's requirements, and add any that you may have forgotten earlier. The end of an interview is the perfect time to state your interest in the position: if you know you want the job, suggest a final reason that the job is appealing to you personally. Don't forget to ask about the next step interview process, ask for the interviewer's card, and when the interviewer expects a decision to be made.

Finally, respect the value of the interviewer's time. Use the contact information on their card to write a brief note of thanks - the final step of an interview, no matter the state of the position, is to express your gratitude to the interviewer for his or her time.

4. Chef Interview Question and Tip: 2007 Rising Star Chris Lee, Gilt, New York
Born in Queens and raised on Long Island, Chris Lee returned home to helm the kitchen of Gilt in August of last year, after a successful turn as executive chef of the Striped Bass in Philadelphia. At Gilt, located in the former Le Cirque 2000 space in The New York Palace Hotel, Chef Lee's menu includes his signature Bluefin Tuna Wellington, lobster sliders, and "Haus-Made" Bratwurst with Spaetzle and Cornichons.

When Chef Lee interviews line cooks for his team, his first interview question is typically, "Are you willing to learn?" Lee relates a recent occasion when his line cooks taught him a new technique and then continues, "not just from me, but from everyone else in the kitchen."

When addressing young chefs who often change positions rapidly early in their careers, Chef Lee disagrees with many of his colleagues, stating that he "values jumping from restaurant to restaurant and learning." Once it's time to get serious, the chef cautions that "if you want to be a sous chef, you need to commit three years" to what her refers to as "the program," his own system of experimentation, production, and service.
