Q: I am going for an Executive Chef position in NYC a Hotel, but never had the
title before. What would I be lacking, even though the company is very interested
as a candidate? I am currently a banquet chef/exec. sous chef at a busy hotel
in NJ. I held a Chef de Cuisine, sous chef, and every other postion in the culinary
field, plus baking and wedding cakes.In total I have 16 years in the business.

A: It sounds like you have the qualifications for your first Exec Chef position. What will be critical is that you have the references of a couple of current Exec Chef who will vouch that you are indeed qualified and they reccommend you. You need to be sure and let your prospective employer know about the breadth of your experience in the various positions, including volume numbers. In addition, present your credentials as a developer by identifying specific individuals you have helped grow in the business. If you follow the then follow the road map, I like your chances.
