4. CEO's Dish: Job Swapping

A fantastic way to enhance your staff’s expertise and provide additional training is to have them participate in job swapping. Swapping allows your employees to broaden their knowledge, gain great experience, and reinvigorate their creative energy. It is an opportunity for your staff to learn new cuisines and techniques. Send your employee to work for a master chef, a restaurant with a different type of cuisine, or to another country to learn traditional culinary techniques. An employee switch does not necessarily need to be done simultaneously and can be paid or unpaid, depending on the situation and your budget. Restaurants can continue to pay their employees during their swap or employees may be willing to work for free for the opportunity to work with a master chef.

Contact restaurants and chefs that you think would be appropriate for a swap and ask them to participate. Also, find out the chefs your employees would be interested in learning from. Outline the specific goals you would like your employee to achieve during the swap so there is a clear understanding of why they are participating in a switch. When they have completed the swap, the employee can pass on what they have learned to other staff.

6. Participate in Restaurants Against Hunger - October 19, 2004

Since 2001, over 100 restaurants in New York and surrounding areas have helped Action Against Hunger (AAH) by participating in Restaurants Against Hunger—inviting customers to have dinner in their establishments and donating a percentage of their profits to AAH. This year, the event will take place in San Francisco, Washington, D.C., Los Angeles, Chicago, New York, and Boston. The event will be a win-win proposition for both participating restaurants and AAH.

  • The event will be held on a Tuesday night, typically a slow night, in order to increase business for restaurants on that day.
  • A minimum donation of 20% of sales for the night is requested in order to generate media coverage, provide high quality public relations for restaurants, and maximize donations for AAH.
