Ingredients:

  • 400 milliliters coconut juice
  • 60 grams sugar
  • 160 grams spray dried coconut “willpowder”
  • 2.44 grams xanthan gum
  • 1 CO2 charger

Method:
Warm 1/4 coconut juice to dissolve sugar then add dried coconut and finally, xanthan. Bring to a boil, strain, and allow to cool to 45°C to 50°C before mixing with remaining xanthan. Strain, fill soda siphon and charge once.
