The fact that the industry is feeling more at ease with the title mixologist as opposed to bartender reveals how seriously the culinary world is beginning to take their cocktails. Just as a few years ago the lines between pastry chefs and cuisine chefs blurred and collapsed in so many kitchens across the country, mixologists turn more and more to the kitchen for technique, ingredients, and business opportunities. As new niches evolve within the industry, mixologists like Junior Merino of The Liquid Chef Inc. and Ivan Lemoine of iFoodStudios are successfully branching out and creating consulting companies to set up the cocktail programs at New York bars like Rayuela and P*ong.

In this vein, a roving group of mixologists from Holland ventures beyond the bar and represents another one of the developing niches within the industry: The Fabulous Shaker Boys is a professional mixology agency that sends satellites from their native Amsterdam to mixology capitals across the world. They’re reminiscent of a group of upscale personal chefs or caterers, but their focus is strictly on mixology.

The Shaker Boys set up white linens, shakers, and fresh fruits to make their traveling, transient bars and use the expressive medium of booze to educate and entertain other professionals and revelers. Founded by bartender and club owner Ricardo Sporkslede and led in tandem with Tal Nadari and Misja Vorsterman, both men and women make up Shaker Boys and create cocktails at high-profile events, lead workshops for companies and consumers, and develop cocktail programs for restaurants, bars, clubs, and spirits companies.

On Valentine’s Day the Shaker Boys came to the StarChefs office and simulated their signature drinks-mixing session complete with a dose of Dutch booze history and proper mixology etiquette. They surprised us with their alcohol of choice – not the popular Dutch distillation, gin, but Sonnema VodkaHerb, a gin-like vodka with notes of juniper, herbs, and spice. In the Vodka Herbitan, they amplify the VodkaHerb’s herb-infused, charcoal-distilled notes with fresh sprigs of thyme and sweeten it with the caramel undertones of maple syrup rather than simple sugar syrup.

Yield: 1 Drink

Ingredients:
3 raspberries
3 blackberries
2 ounces Sonnema VodkaHerb
½ ounce lemon juice
1/3 ounce simple syrup
2 blackberries, 1 rasbperry, skewered on a toothpick

Method:
Muddle the raspberries and blackberries, add the other ingredients, and shake with ice. Double strain into a chilled martini glass and garnish with the toothpick.

Vodka Herbitan

Yield: 1 Drink

Ingredients:
2 2/3 ounces Sonnema VodkaHerb
6 sprigs thyme
1/3 ounce maple syrup
1 ounce cranberry juice

Method:
Shake with ice and double strain into a chilled martini glass.

Ingredients:
¼ grapefruit, flesh only
Dash simple syrup
2 ½ ounces Sonnema VodkaHerb
½ grapefruit wheel

Method:
Muddle the grapefruit then add the Sonnema VodkaHerb and simple syrup. Shake and double strain into a chilled martini glass. Garnish with the grapefruit wheel
