In anticipation of the recent foie gras ban in Chicago, executive chef Sarah Nelson of Fixture created a tasting menu revolving around this now illegal ingredient. We sampled this menu last May, just one month before the ban took effect.

With sustainable agriculture on everyone’s lips, Chef Alex Cheswick follows suit by showcasing local produce on his tasting menu with Michigan heirloom tomatoes, lingonberries, and microgreens.
