Sugared Pumpkin Seeds

Ingredients:
- ¼ cup egg whites
- 2 Tablespoons sugar
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon cayenne pepper
- Pinch of salt
- 1 cup raw pumpkin seeds (pepitas)
Method:
Preheat oven to 325°F. Whisk egg whites with sugar, spices,
and salt. Toss with pumpkin seeds. Spread seeds on Silpat-lined
baking sheet. Bake 7-10 minutes, stirring seeds every 3 minutes.
Cool and serve.
