Kaffir Collins

Yield: 1 Cocktail


1 teaspoon turbinado sugar
½ ounce freshly squeezed lemon juice
3 to 4 kaffir lime leaves
½ ounce freshly squeezed lime juice
¼ ounce simple syrup
2 ounces Plymouth Gin
Soda water

Pour the turbinado sugar into an 11-ounce Collins glass; add a dash of lemon juice along with the kaffir lime leaves. Gently muddle the mixture to release the oils in the lime leaves without creating any tears. Add the remaining citrus juice and simple syrup, and stir to dissolve the sugar. Add the gin and fill the glass with ice. Top with the soda water and stir gently.
