Yield: 10 Serving
Ingredients:
- 5 pounds whole natural almonds
- 2 quarts sugar
- ¾ quart water
- 1 cup salt
- 1 cup sugar
Method:
Preheat the oven to 150 degrees. Dilute the sugar in the water and
add the almonds. Bring them to a slow boil. Drain and reserve the
almonds. Lay the almonds out in one thin layer onto sheet pans.
Mix salt and sugar and sprinkle over almonds. Dry out in the oven
for 4 hours. After the almonds are nice and dry, place in a perforated
pan and put in the smoker for 1 hour. Alternately, almonds can be
smoked in a perforated pan suspended inside a large pot, with woodchips.
