  • 2 strawberries
  • ½ ounce fresh lemon juice
  • ½ ounce simple syrup
  • 1 ounce Plymouth Gin
  • 1 ½ ounces Mumm Joyesse Demi-Sec Champagne

Muddle 1 strawberry in a mixing glass. Add lemon juice, simple syrup and gin. Add ice and shake vigorously. Strain into a chilled cocktail glass and top off with Champagne. Garnish with remaining strawberry.
