Toro Maiz Asada

Yield: 2 Servings


1 egg yolk
2 tablespoons lime juice
2 tablespoons water
2 cups oil
Salt and freshly ground black pepper to taste

Assemble and Serve:
2 ears corn
½ cup cotija cheese
1 teaspoon cayenne pepper
1 lime  


For the Mayo:
Whisk the egg yolk until it reaches ribbon stage. Add lime juice and water and continue to whisk. Slowly pour in oil, whisking vigorously, until the mixture is emulsified. Add salt and pepper to taste.

To Assemble and Serve:
Remove husk of corn and grill corn until cooked through. Remove corn from grill, coat in the lime mayonnaise, then roll in cotija cheese. Finish with a sprinkle of cayenne and freshly squeezed lime juice.
