Ginger Julep

Yield: 1 Cocktail

1 teaspoon chopped ginger
1 pinch fresh mint leaves
2 ounces bourbon
½ ounce Aperol
½ ounce fresh lemon juice
½ ounce simple syrup
3 ounces ginger beer
1 sprig mint

In a shaker, muddle the ginger and mint. Combine ice, bourbon, Aperol, lemon juice, and simple syrup. Shake vigorously and strain into a rocks glass filled with cracked ice. Top with ginger beer. Garnish with a sprig of mint.
