Iced Green Tea with Wildflower Honey
From Tea: Essence of the Leaf by Sara Slavin and
Karl Petzke, (Chronicle Books, 1998)
Adapted by StarChefs
Yield: 4 Servings
Ingredients:
- 2 Tablespoons green lea leaves
- 5 cups water
- 2 Tablespoons wildflower honey, or to taste
Method:
Dissolve honey in a few Tablespoons of warm water.
Place tea leaves in a teapot. Bring water to a boil. Pour water over
tea leaves and steep 5 minutes. Strain leaves from tea. Allow tea to cool
to room temperature before pouring over ice. Stir in desired amount of
liquid honey to sweeten tea.
Packing tips:
Place tea in a shatterproof container such as a plastic jug or insulated
bottle/thermos. Chill in the refrigerator until it is time to pack for
the picnic. (Freezing the tea also works because it stays very cold as
it melts.) Place container at the bottom of the cooler where it is the
coldest.
