Flourless Passover Brownies

Yield: 24 Brownies
- ¾ stick unsalted butter, softened
- ¾ cup sugar
- 5 eggs, separated
- 6 ounces bittersweet chocolate
- 6 ounces almonds, finely ground or almond flour
- Pinch of salt
Preheat oven to 350ºF. Grease a 9-inch square baking pan.
Cream butter and sugar in bowl electric mixer. Add egg yolks and
mix in thoroughly. Melt chocolate over double boiler. Cool and add
to butter mixture. Add finely ground almonds or almond flour. In
a separate bowl, beat egg whites until stiff. Fold into batter.
Pour into prepared baking pan and bake for 45 minutes or until toothpick
inserted into center of pan comes out clean. Cool completely and
cut into squares.
