Matsutake Baked on Cedar

Yield: 4 Servings

Ingredients:

  • 4 (6 – inch) square cedar planks, untreated
  • 8 grade A Matsutake mushrooms, cleaned of debris and brushed
  • ¼ cup olive oil
  • Sea salt
Method:

Preheat oven to 400°F. Slice mushrooms very thin. Place in a bowl. Lightly season with salt. Combine mushroom mixture with olive oil, tossing gently with your hands. Arrange mushrooms flat on each plank. Bake until softened. Serve immediately.
