Mother's Day 2005

Mother’s Day is an opportunity to conjure classy and elegant menus with recipes that will make well-deserving moms feel like royalty in your restaurant. Chef Joël Antunes of JOËL in Atlanta, GA, spins Mediterranean and Asian influences into his French cooking to create dishes that will delight any mother. Tangy gazpacho is topped with a cool, refreshing tomato sorbet, scallops are seared in brown butter, then bathed in a rich chicken jus spiked with bacon and star anise, and delicate sautéed quail is nestled on a bed of lentil salsa. Chef Antunes’ menu is complete with a praline napoleon in deference to the classic sweet treat of his Southern milieu.
