Joël Antunes of JOËLin Atlanta,
GA, spins Mediterranean and Asian influences into his French cooking
to create dishes that will delight any mother. Tangy gazpacho
is topped with a cool, refreshing tomato sorbet, scallops are
seared in brown butter, then bathed in a rich chicken jus spiked
with bacon and star anise, and delicate sautéed quail is
nestled on a bed of lentil salsa. Chef Antunes’ menu is
complete with a praline napoleon in deference to the classic sweet
treat of his Southern milieu.
