Fruit and Nut Granola |
Yield: 6 servings
Ingredients:
- 3 cups organic rolled oats
- 3 Tablespoons brown sugar
- 1 Tablespoon dark corn syrup
- 2 ounces fresh orange juice
- 1 ounce pumpkin seeds, hulled
- 1 ounce sesame seed, unhulled
- 1 ounce walnuts
- 1 ounce almonds, slivered
- 1 ounce sunflower seeds
- 1 ounce currents
- 1 ounce golden raisins
- 1 ounce black raisins
- 1 ounce dried cherries
- 3 cups whole or skim milk/yogurt or apple or orange
juice (your preference)
Method:
- In a bowl, mix rolled oats, brown
sugar, corn syrup and orange juice very well. Place
mixture on a baking sheet tray with parchment paper,
spread out evenly and bake at 350°F oven for 45 minutes
to 1 hour and 15 minutes. When granola mixture is
crisp and has thoroughly dried, set out to cool.
- Toast all nuts and seeds separately
until golden, for more flavor.
- Break up granola mixture with a metal
spatula and place back in a bowl; add nuts, seeds
and mixed dried fruits.Serve granola with your favorite
dairy product: skim milk, whole milk or yogurt. Fruit
juices may be substituted for dairy products.
