Chilled Green Bean Salad

  • Chilled Green Bean Salad on StarChefs.comVegetable oil
  • ¼ cup chopped garlic
  • 1 pound string beans, ends trimmed
  • Sugar
  • Salt


Heat vegetable oil to 210°F. Add chopped garlic and fry to golden brown. Remove garlic (reserving the oil) and drain on paper towels. Deep fry the string beans in the oil until the skin begins to blister. Remove the beans, transfer to an ice water bath, and drain completely. Dry the beans and toss with the fried garlic. Season the beans with sugar, salt, oil.
