Sweet Treats for Halloween
By Betsy Feinberg
In the spirit of Halloween sweets and treats, entice your restaurant
guests with seasonal desserts. Children aren’t the only ones
who enjoy a little Halloween merriment – host an adult-only
late night dessert fest, featuring fun and sophisticated pastry
creations. Retro desserts are a major trend in pastry these days.
Pastry Chef Liz Steffey of Andaluca at the Mayflower Park
Hotel in Seattle uses pumpkins in an ode to childhood sweets, whipping
up pumpkin puree to make spiced Pumpkin Cookies accompanied by a
creamy, frothy Pumpkin Milkshake. » more

Halloween desserts are not relegated to pumpkin-driven dishes. Pastry
Chef Karen DeMasco of Craft in New York uses peak-of-the-season
granny smith apples to make her green apple jelly, a bright and
tangy accompaniment to her lemon verbena panna cotta.
Chocolate lovers will enjoy the Flourless Chocolate
Torte with Triple Chocolate Ganache and Orange Whipped Cream from
Pastry Chef Angela Tustin of Plate in Philadelphia. Add a few drops
of orange food coloring to the whipping cream to create a decadent
dessert that plays up the holiday theme.
