Red Chile-Marinated Skirt Steak
Chef Tony Maws of Craigie Street Bistrot – Cambridge, MA
Adapted by StarChefs

Yield: 10 Servings

Ingredients:
6 New Mexican dried red chiles, rehydrated in water
6 cloves garlic
1 Tablespoon coriander seeds
1 Tablespoon cumin seeds
2 cloves
10 allspice berries
1 Tablespoon ground ginger
1 Tablespoon dried thyme
2 teaspoons black peppercorns
1 cup canola oil
½ cup soy sauce
Salt
5 pounds of skirt steak

Method:
Grind all spices and seed chiles. Put spices and chiles in blender and puree. Rub spice mixture on skirt steak and let sit overnight. Grill to desired level of doneness.

Wine pairing:
A fruity Zinfandel such as the Fife Vineyards Mendocino Uplands Zinfandel 2001
