| Toasted Couscous
with Spinach Leaves

Yield: 6 servings
- 1 Tablespoon butter
- 1 cup couscous
- 1-1/4 cups water
- 1 pound leaf spinach
- 1/2 Tablespoon Kosher salt
- 1/4 Tablespoon fresh ground black pepper
In a sauté pan melt the butter over medium heat. Add the
couscous and toast until golden brown. Remove the pan from the heat
and pour the water over the toasted couscous. Immediately cover
the pan with plastic wrap; steep for 5 minutes. Remove the plastic
wrap and mix in the cleaned and trimmed spinach leaves. Adjust the
seasoning with Kosher salt and black pepper. Reserve until ready
to use.
Note: When warming up, add a little bit of water and warm the
couscous up in a pan while stirring continuously. |
