Walt's Apple
Oatmeal Crumble

Yield: 4 servings
- 1 Tablespoon butter
- 6 large apples, peeled, cored and cut into wedges, preferably

- 1/2 cup sugar
- 1/4 teaspoon ground cinnamon
- 1/4 cup golden raisins
- 1/4 cup ground walnuts
- 1/4 Tablespoon butter
- 2 Tablespoons old-fashioned rolled oats
- 1 Tablespoon honey
- 1 Tablespoon brown sugar
- 1/2 teaspoon wheat bran
- Caramel Sauce (see recipe below)
In a sauté pan melt the butter over medium heat; add apple
wedges and cook until golden brown. Add the sugar and toss well;
continue to cook the apples until soft and well caramelized. Remove
the pan from the heat and mix in the ground cinnamon, raisins, and
walnuts. Reserve. In another sauté pan prepare the crumble
by melting the butter and toasting the old-fashioned rolled oats,
with the honey, brown sugar and wheat bran until golden brown. Butter
4 rock glass or ramekins and pack the crumble on the bottom of each
glass. Pack the cooked apples very tightly in each glass. When ready
to serve, place the rock glass with the apples in the oven until
warm and then turn upside down on a plate. Serve with Caramel Sauce
or Vanilla Bean Ice Cream and/or Vanilla Bean Sauce.
The Caramel Sauce
Yield: 4 servings
- 1/2 cup heavy cream
- 1/4 vanilla bean, scraped
- 1 Tablespoon sugar
- 2 egg yolks
- 1/2 cup sugar
- 2 Tablespoons water
In a stainless steel pot, bring the heavy cream to a boil with
the scraped vanilla bean in it. Mix the sugar and egg yolks in a
stainless steel bowl. Slowly pour the boiled cream into the sugar
and egg mixture and mix well. Reserve allowing to cool. Meanwhile,
boil the sugar and water to an amber color, about 285 degrees Fahrenheit.
When ready, pour the chilled vanilla sauce into the hot caramel
and mix well. Continue to slowly pour the sauce into the caramel
until everything is well mixed. Reserve and chill again until ready
to use.
