INGREDIENTS
Agua de Jamaica:
6 cups water
¼-inch disk fresh ginger, grated
3 ounces dried Jamaica, or hibiscus, flowers
¾ cup sugar
1 tablespoon fresh lime juice
Assemble and Serve:
¾ ounces Gosling's Black Seal Rum
1 ounce gold rum such as Mount Gay
2 barspoons fresh lime juice, or ¼ ounce
1 barspoon simple syrup
1 short dash Fee Bros. Whiskey Barrel Aged Bitters
1 short dash A.B. Smeby Hibiscus Rose Bitters
Crystallized ginger
Lime wedge
METHOD
For the Agua de Jamaica:
In a medium saucepan, boil the water with the ginger. Remove from heat. Add the dried flowers and sugar. Steep for 15 minutes. Strain, add lime juice, and cool.
To Assemble and Serve:
Starting with the Gosling’s, build the drink in a highball glass. Add ice to top. Garnish with the ginger and lime wedge. Serve.
