a Quenelle with Chef Olivier Andreini, CMC of The CIA

1.Olivier Andreini gathers a full spoon of pork mixture to
form a quenelle. |

2.Next, he shapes his quenelle using a second wet spoon of
the same size. |

3.Chef Andreini smoothes out and finishes the quenelle by
scraping the second spoon against the first. |

4.Voila! The quenelle takes the role of Thai Dumpling on a
spoon. |
