Making a Quenelle with Chef Olivier Andreini, CMC of The CIA
November 2006

1.Olivier Andreini gathers a full spoon of pork mixture to form a quenelle.

2.Next, he shapes his quenelle using a second wet spoon of the same size.

3.Chef Andreini smoothes out and finishes the quenelle by scraping the second spoon against the first.

4.Voila! The quenelle takes the role of Thai Dumpling on a spoon.
