Part of Relais & Chateaux, LIcole des Chefs is an innovative program enabling passionate amateur cooks to enter some of the world's greatest kitchens as culinary interns. Worldwide participants include Charlie Trotter's, The French Laundry, Le Manoir aux Quat'Saisons, L'Arpege and numerous others. Interns may spend up to ten hours a day in the kitchen as they shadow the staff, working their way through garde manger, saucier, meat and pastry stations. They may also take part in such daily activities as deliveries, preparation, meetings and family meal.

Located just outside of Washington, DC, L'Academie de Cuisine offers over 5,000 cooking classes annually. Classes are taught Monday through Saturday in a wide variety of cuisines including French, Italian, Thai, Chinese, Indian, Eclectic American, Southern American and Southwest American.
