Artisan Olive Oils: Implementing a Profitable Olive Oil Tasting Menu and More Wine Tasting


A native of England, Jeffrey Shaw is the marketing director for Foods from Spain, part of the Trade Commission of Spain in New York. In this capacity, he has worked with a variety of products and producers in designing and implementing marketing programs for some of Spain’s best products: cheese, clementines, piquillo peppers, and perhaps most importantly, olive oil. Spain produces an average of one million tons of olive oil annually, making it the number one exporter of olive oil in the world.

Similar to wine varietals, defining factors of the terroir, such as climate, soil, and elevation, along with specific olive varietals and blends, provide Spain's oils with a variety of tastes, and a smooth, vibrant, and bold character.

As part of his marketing duties, Shaw conducts guided tastings to educate chefs, journalists, and consumers on Spain's unique olive oil varietals.
