Sommelier Sebastian Zutant of The Red Hen - Biography

Sebastian Zutant realized his calling in food and beverage industry at an early age. He first started his restaurant job making pizzas and pastas at a neighborhood Italian restaurant in his hometown Olney, Maryland. A photography graduate from the College of Charleston in South Carolina, Zutant made his way back to D.C. to work at top restaurants in the capital, including Chef Geoff’s, Nectar, and Komi, where he cemented his passion for wines and developed service and somm skills.

In 2005, Ashok Bajaj tapped Zutant to serve as a sommelier at the modern Indian eatery Rasika in D.C.’s Penn Quarter, where he was faced with the challenge of pairing with both sweet and spicy elements of Indian cuisine, before moving on to curate the award-winning wine list at Proof with Chef Haidar Karoum. After five years at Proof, Zutant opened his own restaurant, The Red Hen, with partners Mike O’Malley and 2014 Rising Star Chef Mike Friedman. At the Italian-inspired Red Hen, he oversees the beverage program, which boasts eclectic finds from Northern Italy, Germany, Austria, and Burgundy.
