Frozen “Cotton” Meringue with Gin, Vodka, and Brown Sugar

INGREDIENTS:

3 grams egg white powder
175 grams water
1 sheet bloomed gelatin
75 grams simple syrup
5 grams citric acid
25 grams lime juice
20 grams vodka
raw sugar

METHOD:

In a mixing bowl, whip egg white powder and water. In a small saucepan, gently heat simple syrup; remove from heat and add bloomed gelatin. Combine with egg white powder mixture and fold in citric acid, lime juice, and vodka. Pipe into half hemisphere silicone molds and freeze. Set at least 24 hours. Remove from mold, toss in raw sugar, and serve immediately.
