Opening in early 2012 and helmed by Chef David Gilbert,Sustenio, located in the Eilan Hotel, is the brainchild of celebrity Chef Stephan Pyles. The contemporary cuisine will focus heavily on farm-to-table, so much so that there are plans for the restaurant to have its own gardens, make its own cheeses with locally farmed milk, and eventually have an in-house charcuterie program, according to Gilbert. Sustenio also has a ceviche bar, which was inspired by Gilbert’s time in Peru, where he became infatuated by the local cuisine.
