Unsatisfied with the traditional shoyu and miso he found in San Francisco’s noodle houses, Chef Richie Nakano created Hapa Ramen, home to his original take on the Japanese staple. Working out of a community kitchen space, Nakano developed an organic ramen noodle recipe, the backdrop for inventive options like Big Daddy’s fried chicken and vegetarian varieties made with seasonal produce and vegetable broth. Nakano’s currently serving these offerings and more twice weekly at the Ferry Building market, but he’s already started work on a small brick-and-mortar restaurant near Pacific Heights, set to open in 2013.
