2012 New Orleans Rising Star Chef Nathanial Zimet makes fearless Southern cuisine. Unencumbered by tradition, he cooks exciting, soulful dishes that whisper to the old South while screaming the new. Zimet hails from North Carolina, and he’s adept at cooking with smoke, which curls cold and hot into a number of his dishes—scallops, sausage, and ribs all are kissed with oak. And like any good Southern eccentric, Zimet has a knack for combining unlikely bedfellows (i.e., mussels and collards) and re-imagining classics (his Crispy Cornbread is a Southern vegetable buffet tucked inside a golden square of cornbread). Just off Carollton Street, tiny, shabby-chic Boucherie is built for locals, and even more diners will get to enjoy this no-reservations restaurant when Zimet and crew finish an outdoor patio.
