decorated, classic rock plays over the sound system, and the daily changing menu features thoughtful dishes that express the bounty of Houston and the Gulf. Rucker regularly forages along the Texas coast and in the woods of Tomball, so his cuisine never gets tired. And 2011 Houston Rising Star Pastry Chef Chris Leung’s polished desserts work as a fluid continuum of Rucker’s experiential menu. Seasonally inspired and masterfully crafted, Leung doesn’t shy away from local flavors. Hay ice cream has a satisfying earthiness and artistic flair that typifies Bootsie’s style.
