Blue Hill is the West Village outpost of Chef Dan Barber’s straight-from-the-farm cooking style. Despite the distance between the restaurant and its purveyors, the feeling of country cooking pervades. Barber enables diners to pay attention to the ingredients on an entirely new level with dishes like summer bean salad with purslane and pistachios and grass-fed lamb with Stone Barns bok choy.
