The brick-walls, open kitchen, and bare ceilings of Boerum Hill’s Bien Cuit set the scene for some of the city’s best pastry. 2013 Rising Star Artisan Zachary Golper’s breads need no frills or fancy, just an industrial space with a small display case continuously refreshed until there is nothing left but crumb and lust. Golper’s 13 years of experience working across the Continental United States and France were well spent—MOFs, artisans, and masters of the trade have imparted a wealth of knowledge that spans well beyond baking and into his lively entrepreneurial spirit. His croissants, cooked as deeply brown as possible before burning, boast a shatteringly crispy crust with a creamy, yellow crumb. For Brooklyn coffee enthusiasts, Bien Cuit serves Stumptown Coffee expertly pulled from a quality espresso machine. Now with a space in Manhattan and a commissary in Sunset Park in the works, Golper’s pastries and breads will hopefully keep the city enthralled for years to come.
