Kida’s Japanese background is apparent in all of his Asian-inflected dishes. When we tasted with him in 2009, his Buckwheat and Eggs wereluxurious and reminiscent of a classic Italian carbonara, but with caviar replacing the pancetta and uni cream instead of eggs to achieve a silky mouthfeel.
