The Chilean town of Valdivia became a hub for German immigration in the late 19th century, and its Eastern European settlers had a major impact on the city’s cuisine. A few hundred years later their legacy lives on at Chef Sebastián García’s Agridulce, where German potatoes and slabs of meat accompany mugs of local German-style beer. The bustling restaurant’s best dishes incorporate Latin ingredients and flair, and its sandwiches served on soft white rolls with piquant pepper sauces and house-made mayo are a must-order.
